This addicting sauce is the perfect accompaniment to any dish!
I’ll be honest, I typically rely on jarred pasta sauce. I know, I know, if I had an Italian grandmother she would be rolling in her grave. It is just such an easy pantry staple to have on hand when you are in need of a quick dinner.
Buttttttt, after my most recent trip to Italy I was inspired to try something a bit more creative. *Enter Roasted Red Pepper and Sun Dried Tomato Crack Sauce* This recipe only needed one round of testing becuase it is THAT GOOD but I loved it so much that I made a second batch on the night I first created it to have on hand in the fridge. Although it is shown as a pasta sauce here it would be great served over a protein, mixed in a macro bowl, smeared onto a sandwich, poured over a shoe (guy fieri anyone??) … you name it, it will work!
Roasted Red Pepper and Sun Dried Tomato Crack Sauce
- 1/4 cup Sun dried tomatoes (about 7 tomatoes)
- 1.5 Roasted Red Bell Peppers (Jarred ones work great)
- 1 Clove pealed garlic
- 1/2 cup non-dairy milk
- 1 Tbsp Nutritional yeast
- 1 tsp Italian seasoning
- 1 tsp Salt
Toss all ingredients in a blender. Blend till smooth. Thats it.
*If serving with Pasta reserve some of the starchy pasta water to toss with the pasta to help the sauce stick.
*If using as a pasta sauce this recipe made enough for roughly two servings.
