Trader Joes Cauliflower gnocchi may be the most trendy food of 2019; BUT, there is a lot of controversy around how to cook it. I have tried every method out there from package directions to baking, to air frying! Let me tell ya, if you cook it according to package directions they ALWAYS stick to the pan. But I digress, I have figured out a fail proof recipe to cook them and it only requires 5 INGREDIENTS and 1 dish!!! Let me say it louder, ONE DISH! No more scraping the stuck pieces off the bottom of your skillet.
This recipe is very basic, but like all my recipes you could easily customize it by adding in your favorite veggies or protein. This Trader Joe’s Cauliflower Gnocchi Casserole already follows my formula for a balanced dinner. Feel free to spice it up by adding spinach, broccoli, sausage, sun-dried tomatoes, olives, red pepper flakes, etc. I also recommend serving this dish with crusty garlic bread for some crunch and textural variation.



Cauliflower Gnocchi Casserole
Ingredients:
- 2 cusp sauce
- 1 bag Trader Joes Cauliflower Gnocchi
- 1 can butter beans, drained and rinsed
- 1/4 cup artichoke hearts, chopped
- 1 cup shredded mozzarella, divided
- Any extra veggies you choose!
Instructions
- Pre-heat oven to 400 degrees.
- Combine sauce, cauliflower gnocchi, butter beans, artichoke hearts, and 1/4 cup mozzarella in a small baking dish or cast iron skillet. Mix well to combine. Top with remaining 3/4 cups of cheese. Place casserole in the oven and let cook for 35-40 minutes
- Remove the casserole from the oven when the cheese is melted and the gnocchi cooked through. Top with fresh basil and red pepper flakes.
Tips:
- Broil the cheese for 2-3 minutes with the oven wedged open to get a crispy golden brown crust.
- You can sub a different white bean for the butter beans however the butter beans are roughly the same size as the gnocchi which pulls the dish together nicely. I would not recommend subbing chickpeas as they have a much more dense/firm texture.
